INGREDIENTS:
4 oz ground turkey
tomatoes and/or kalamata olives
cucumbers
2/3 cup brown rice
Tzatziki Sauce (makes 4 servings):
½ cup plain Greek yogurt
¼ cup grated cucumber
2 tablespoons lemon juice
½ teaspoon dry dill
½ teaspoon garlic powder
salt to taste
Seasoning Mix
1 ½ tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
¾ tsp pepper
DIRECTIONS:
Season meat to taste, save remaining seasoning mix. Prepare rice according to directions on rice. Cook turkey in saute pan with cooking spray. Slice cucumbers and tomatoes. For the tzatziki sauce, add Greek yogurt, grated cucumber, lemon juice, dill, and garlic powder to a small bowl. Mix together until everything is combined. Salt to taste. Assemble in bowl, top with tzatziki sauce, and enjoy!
