Soba Noodle Bowl with Chicken:
1 egg soft or hard-boiled cut in halves
1 c. roughly of soba noodles
Salt for boiling water
4-5 oz. chicken breasts, sliced
1/4 avocado, sliced
4 baby carrots, julienned
Handful of mung bean sprouts
1 dragon fruit, julienned (optional)
DIRECTIONS:
Boil water and prepare soba noodles as directed on package. Season chicken with salt and pepper and grill until cooked. Slice vegetables, dragonfruit, and chicken. Place the noodles into serving bowl. Arrange the dragon fruit, carrots, avocado, sprouts, chicken breast, and soft boiled egg around and on top of the noodles. Drizzle with light vinaigrette, or none at all. Garnish with black sesame seeds and seasonings to taste.
