INGREDIENTS:
2 chicken breasts
3 bell peppers
1/2 onion
Seasoned with salt, pepper and taco seasoning
Taco Seasoning:
2 T ground cumin
1 t paprika
1/2 t cayenne pepper
1/2 t onion powder
1/2 t garlic powder
1/4 t black pepper
1/4 t chili powder
INSTRUCTIONS:
Preheat oven to 375.
Cut up peppers onions and spread out on edge of a sheet tray.
Place two chicken breasts in between the vegetables, spray everything with cooking spray and season with salt, pepper, and taco seasoning.
Bake in oven for about 25-40 minutes, or until chicken is cooked through.
Separate into 4 containers, serve each portion over 1/2 c cooked rice of choice, and pack meals for the week!
