INGREDIENTS:
5 tilapia fillets (4-5 oz)
Lemon pepper
Cooking spray
½ cup lemon juice
1 bundle asparagus
2 bell peppers
1 2/3 cups rice
Garlic Powder
Salt
INSTRUCTIONS:
Set oven to 350 degrees
Rinse rice in pot and fill with 2.5 cups of water, add seasoning to the rice.
Cook until rice is soft.
Wrap foil around a pan, spray both sides of fillet with calorie-free cooking spray.
Season fish fillets with lemon pepper (feel free to add garlic, cayenne, and/or onion for extra flavor)
Pour lemon juice till it soaks bottom of pan. Add pinch of salt.
Fold aluminum foil over the top and seal down the sides to cover the pan
Bake for 12-15 minutes
Trim woody portion of asparagus and slice bell pepper into small pieces.
Set a nonstick skillet on medium-high heat and lightly spray with calorie free cooking spray
Toss in the asparagus and bell peppers. While they cook, season with salt and pepper.
Cook until the asparagus is soft, but not mushy.
Serve tilapia with rice and veggies.
