Taco Seasoned Ground Turkey & “Rice"

Servings: 1

INGREDIENTS:

6 oz Ground Turkey
1 Tbsp Olive oil
1 tbsp butter
2 tbsp diced green chilies
2 tbsp chopped onion
1 tbsp minced garlic
1/4 Avocado
1 cup cauliflower

Seasonings:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

INSTRUCTIONS:

1. Steam a little over 1 cup raw cauliflower florets in a little water covered for for 4 to 5 minutes or until tender but not mushy
2. Drain well and dry on paper towel
3. Using a knife to finely chop as small as “Rice” if possible. Melt 1 tbsp of butter on top of cauliflower.
4. Set a nonstick skillet on medium-high heat and lightly spray with coconut oil.
5. Add ground turkey, 1 tbsp olive oil, green chilies, garlic, onion and seasonings and cook till brown.
6. Serve about 1 cup of cooked ground turkey on top of 1 cup cauliflower rice. 
7. Chop up 1/4 avocado to throw on top and for extra fat and you are good to go!
