INGREDIENTS:
1 medium zucchini
8-10 tsp Keto Marinara Sauce (see pg. 50)
1/2 cup mozzarella cheese
8-10 sliced black olives
8-10 slices pepperoni sausage
1 clove garlic, chopped
INSTRUCTIONS:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. Cut up the zucchini into 8-10 slices then place on a baking sheet.
3. Place baking sheet in oven for 2-3 minutes, just enough time for zucchini to dry/golden up slightly
3. Spread 1 tsp Keto Marinara sauce on each slice of zucchini.
4. Top with cheese, olives, pepperoni and garlic.
5. Then stick back in oven for 4-5 minutes, just enough time to melt the cheese, and serve!
