INGREDIENTS:
1 small (about 5 oz) boneless, skinless, chicken breast half or thighs
2 Tbsp Coconut oil
2 teaspoon chicken jerk seasoning
1/2 cup seeded and chopped tomato
1 tablespoon sliced green onion
1 cup veggies of choice (asparagus, broccoli, green beans, Brussels sprouts)
2 Tbsp butter
INSTRUCTIONS:
1. Put 2 Tbsp coconut oil on chicken. Rub chicken jerk seasoning on both sides of chicken.
2. In small nonstick skillet coated with cooking spray cook chicken over medium-low heat about 6 minutes or until lightly browned, turning once.
3. Place chopped tomato and green onion into skillet. Let them simmer in the chicken broth for a few minutes.
4. Serve chicken and 2 Tbsp butter on top of 1 cup of vegetables. Serve immediately.
