INGREDIENTS:
Handful of spinach
3 tbsp chopped onion
1/4 bell pepper
2-3 links sausage
3 eggs
1-2 tbsp Coconut Oil
1/4 cup shredded cheese
INSTRUCTIONS:
1. Start by sautéing a handful of spinach in a pan.
2. Now, cut up some onions.
3. Cook your sausage in the microwave until crisp. And chop up into small pieces.
4. Sauté the onions for 3-4 minutes. Make sure the pan has enough coconut oil so the eggs
don’t stick later on!
5. In a bowl mix the onions, spinach, eggs, sausage and seasoning.
6. Tilt pan in a circular motion to spread egg. Use a spatula to keep the eggs from sticking to
the pan. Flip after the bottom side is cooked.
7. On half of the omelet put cheese, bell peppers, and more sausage pieces.
8. Enjoy!
