Omelet Rollups

Servings: 1

INGREDIENTS:

3 whole eggs
2-3 oz ground turkey
2 strips bacon
1 tbsp coconut oil or butter
1 handful spinach
1/3 cup bell pepper
1 oz goat cheese

INSTRUCTIONS:

1. Cook bacon in a skillet, when done leave excess fat in skillet from bacon to season and
cook ground turkey in same skillet.
2. In a separate skillet, cook whole eggs in 1 tbsp coconut oil or butter
3. Add goat cheese, spinach, bell peppers, and ground turkey.
4. Roll mixture and wrap in plastic wrap.
5. Refrigerate, and heat up when ready to eat.

Makes 2 Roll-ups
