INGREDIENTS:
3 sweet potatoes
1 lb. lean ground turkey
1/2 cup canned black beans
1/2 cup fresh or frozen corn kernels
1 large tomato, diced
1/2 onion, chopped
1 tsp cumin
2 tbsp cilantro, chopped
1 jalapeno, diced
1/4 cup green onions, chopped
cooking spray
pinch of sea salt
freshly ground black pepper, to taste
DIRECTIONS:
Preheat oven to 450.
Stab potatoes with fork on multiple sides and microwave for 6 minutes. Cut in half horizontally and scoop out the potatoes.
In a large skillet, brown turkey + add beans, onions, cilantro, tomatoes, jalapeno, and cumin. Mix well and simmer on low for 20 minutes.
Remove lid, then add corn and simmer for another 5-10 minutes, or until liquid reduces.
Spray sweet potatoes with cooking spray and place on baking sheet. Season with salt + pepper and bake for 10 minutes.
Add meat filling and serve.
