White Chicken Chili

INGREDIENTS:

1/2 Tbsp olive oil
1/4 onion, chopped
1 tbsp minced garlic
1/4 can tomato with green chilies
4-6 oz. cooked chicken, chopped or shredded
2 tsp ground cumin
3/4 tsp dried oregano
¼ tsp cayenne or crushed red pepper
1 cup Great Northern beans, drained and rinsed
1 cup chicken broth
Salt, pepper

INSTRUCTIONS:

Heat oil in large heavy pot to medium/high.
Add onions. Sauté until translucent (about 10 minutes).
Add garlic, chilies, chicken, cumin, oregano, and hot pepper. Sauté for 2 minutes.
Add beans and chicken broth.
Bring to a boil, reduce heat, and simmer for 2 hours or longer.
Add salt and pepper to taste.
