Black Bean & Egg Tostada (High-Carb)

INGREDIENTS:
1 corn tortilla
1/8 c. shredded cheese
1/4 c.  Black Beans, drained and rinsed
1 whole egg, 2 egg whites
1 tbsp. salsa and/or hot sauce
1/4 avocado 


DIRECTIONS:
In a nonstick skillet over medium heat place your corn tortilla. Heat one side for about 1 minute, then flip. Add cheese and beans and cook for 1-2 minutes until tortilla crisps up on bottom and cheese melts. Slide out onto a plate.
Spray skillet with nonstick spray. Add your egg and cook according to preference. When cooked to your liking slide out of skillet over top of your tortilla.
Top with salsa, hot sauce and avocado.
